Banana Ice Cream
This has got to be the easiest recipe in the world for ice cream! All you need is a a couple of nice ripe bananas. I have made this many times when we have had friends for dinner and when I ask what they think is in the ice cream, they invariably answer: cream, banana, sugar etc and they are surprised that it is only banana!
We have banana trees and often have a glut of bananas and we have to freeze them because everyone gets sick of my banana muffins, banana bread and banana smoothies! Frozen bananas keep well and whip up easily into a nice creamy consistency that is very much like ice cream – or at least a soft serve. NB: Prepare earlier: first you need to freeze your bananas (without skins on) for a day or so.
Add 2-3 frozen bananas broken up or chopped into a few pieces to a food processor or blender. Start to process for a short period until they break up and start to get a bit creamy. You can just do plain banana but I like to add in a few extra goodies for a change – such as walnuts, pecans or cinnamon. Add these and then continue to process/blend until it is whipped into a creamy soft serve consistency. You also have the option of adding 1/2 cup of coconut cream – which makes the ice cream super creamy.
You need to eat this ice cream straight away as it melts pretty fast…but you can re-freeze for a short period if necessary and then you can scoop out into a firmer ice cream. But avoid freezing for longer periods as it tends to produce too much ice.
