Spicy Masala Omelette

A traditional Indian masala omelette combines a range of tasty herbs and spices with eggs and is a great flavour change from a traditional savoury omelette.
I love to make this for breakfast but it is also great for lunch or a light dinner served with a side salad. You can just eat it as a plain omelette for a low carb version or you can roll it in a flat bread, tortilla or wrap for a more substantial meal.
This recipe serves one person but you can double the ingredients if you are making for two and just make sure you adjust the frying pan size when cooking the omelette. Flipping the omelette is a mean feat, but at least it still tastes good if you miss the mark!
